Garlic Butter Blue Oyster Mushrooms

Ingredients

  • 1 lb blue oyster mushrooms, torn into large bite-sized pieces

  • 2 tbsp olive oil

  • 2 tbsp unsalted butter

  • 3 cloves garlic, minced

  • 1 tsp fresh thyme (or ½ tsp dried)

  • Salt and freshly ground black pepper, to taste

  • 1 tbsp fresh parsley, chopped

  • Optional: squeeze of lemon for brightness

Instructions

  1. Prep the mushrooms – Gently clean and tear them into pieces, avoiding waterlogging (a damp cloth works best).

  2. Heat the pan – In a large skillet over medium-high heat, add olive oil and let it shimmer.

  3. Cook the mushrooms – Spread mushrooms in a single layer. Let them brown undisturbed for 3–4 minutes, then stir and cook another 3–4 minutes until golden.

  4. Add flavor – Reduce heat to medium, add butter, garlic, and thyme. Stir gently and cook until garlic is fragrant, about 1 minute.

  5. Finish – Season with salt, pepper, and parsley. Add a squeeze of lemon if desired.

  6. Serve – Enjoy as a side dish, on toast, tossed with pasta, or atop risotto.
