Garlic Butter Blue Oyster Mushrooms
Ingredients
1 lb blue oyster mushrooms, torn into large bite-sized pieces
2 tbsp olive oil
2 tbsp unsalted butter
3 cloves garlic, minced
1 tsp fresh thyme (or ½ tsp dried)
Salt and freshly ground black pepper, to taste
1 tbsp fresh parsley, chopped
Optional: squeeze of lemon for brightness
Instructions
Prep the mushrooms – Gently clean and tear them into pieces, avoiding waterlogging (a damp cloth works best).
Heat the pan – In a large skillet over medium-high heat, add olive oil and let it shimmer.
Cook the mushrooms – Spread mushrooms in a single layer. Let them brown undisturbed for 3–4 minutes, then stir and cook another 3–4 minutes until golden.
Add flavor – Reduce heat to medium, add butter, garlic, and thyme. Stir gently and cook until garlic is fragrant, about 1 minute.
Finish – Season with salt, pepper, and parsley. Add a squeeze of lemon if desired.
Serve – Enjoy as a side dish, on toast, tossed with pasta, or atop risotto.
