Soy-Garlic Glazed Shiitake Mushrooms
Ingredients
1 lb fresh shiitake mushrooms, stems removed and caps sliced
2 tbsp sesame oil (or olive oil)
3 cloves garlic, minced
2 tbsp soy sauce
1 tbsp mirin (or honey for a touch of sweetness)
1 tsp rice vinegar
½ tsp red pepper flakes (optional, for heat)
1 tbsp toasted sesame seeds
2 green onions, thinly sliced
Instructions
Prep the mushrooms – Clean and slice the shiitake caps, discarding or saving stems for stock.
Cook the mushrooms – Heat sesame oil in a skillet over medium-high heat. Add mushrooms and sauté for 5–6 minutes until golden and slightly crisp around the edges.
Add aromatics – Stir in garlic and cook for 30 seconds until fragrant.
Glaze – Add soy sauce, mirin (or honey), and rice vinegar. Toss to coat mushrooms evenly and cook until the sauce reduces slightly, 2–3 minutes.
Finish – Sprinkle with sesame seeds and green onions. Add red pepper flakes if desired.
Serve – Enjoy as a side dish, over rice, or as a topping for noodles.
