Soy-Garlic Glazed Shiitake Mushrooms

Ingredients

  • 1 lb fresh shiitake mushrooms, stems removed and caps sliced

  • 2 tbsp sesame oil (or olive oil)

  • 3 cloves garlic, minced

  • 2 tbsp soy sauce

  • 1 tbsp mirin (or honey for a touch of sweetness)

  • 1 tsp rice vinegar

  • ½ tsp red pepper flakes (optional, for heat)

  • 1 tbsp toasted sesame seeds

  • 2 green onions, thinly sliced

Instructions

  1. Prep the mushrooms – Clean and slice the shiitake caps, discarding or saving stems for stock.

  2. Cook the mushrooms – Heat sesame oil in a skillet over medium-high heat. Add mushrooms and sauté for 5–6 minutes until golden and slightly crisp around the edges.

  3. Add aromatics – Stir in garlic and cook for 30 seconds until fragrant.

  4. Glaze – Add soy sauce, mirin (or honey), and rice vinegar. Toss to coat mushrooms evenly and cook until the sauce reduces slightly, 2–3 minutes.

  5. Finish – Sprinkle with sesame seeds and green onions. Add red pepper flakes if desired.

  6. Serve – Enjoy as a side dish, over rice, or as a topping for noodles.
